Can I use multiple devices to complete the EKYC process, or is it restricted to a single device?

Certainly! You can use multiple devices for the EKYC process. If you choose to do so, simply re-enter your mobile number and OTP in the subsequent steps to complete the process from the point where you left (on the earlier device) on the device of your choice.
